Passend zum Japan & Breakfast Market erfahrt ihr bei diesem Workshop mit Markus Shimzu von mimi was Speisen besonders schmackhaft macht und was hinter Umami steckt, dem sogenannten fünften Geschmack. Wir werden eine Dashi Brühe zubereiten und daraus eine Miso Suppe. Denn bei dieser Suppe werden mit minimalsten aber perfekt abgestimmten Zutaten ein tiefer Umami Geschmack kreiert. Die Miso Suppe bildet damit die Quintessenz japanischer Umami Kultur.
Außerdem erfahrt ihr wieso es beliebte Kombinationen wie Ei mit Speck oder Pasta Bolognese gibt und ihr werdet Leckereien ausprobieren vom gereiften Fleisch, fermentierten Eiern bis zu Gemüse. Zu guter Letzt werdet ihr auch eure eigne Shio-Koji Paste herstellen. Damit könnt ihr zur Hause ganz einfach Umami-Experimente angehen.
Der Workshop findet in der Kochschule Neun auf der 2. Insel links vom Eingang Eisenbahnstraße statt.
